Really good dinner

I really didn't know what I was going to make for dinner tonight, I got what was supposed to be a chicken marsala hero from the local restaurant that my buddy and I always order from and split it with P since neither of us was too hungry and I am pretty much Never leaving anything in the work fridge again... well, the sandwich was so incredibly disappointing, it had chicken cutlet, melted mozzarella cheese and what seemed to be Gravy from a jar(!) EWW!! It was too salty and had no mushrooms or onions.. it was on the specials menu, but it seemed like it was just thrown together at the very last minute and when P. buzzed me from the empty office he hangs out on to play games online with his friends and said "Um, mom, that sandwich was really not good" I was still sitting at my desk wondering why this restaurant would even deliver this crap to me, because I have been known to let them know when they send me food that is just not up to par, like the time I got a greek salad that was drenched in dressing and the chef or whoever put that salad together got a little too happy with the oregano, I ate the first 1/4 of the salad and couldn't stand it and tossed the rest, then I faxed them a letter telling them how unhappy I was with this salad that I just paid $8 for. They came 10 minutes later with a new salad and have always put dressing on the side since that day.

But anyway, back to Dinner. I had to stop at Stop & Shop to get juice because there was nothing to drink in the house but milk (and there's only so much you can do with a glass of milk before it gets monotonous) I had a ziplock bag full of drumsticks marinating in some Stubbs, but after the lunch we had I really wasn't in the mood for chicken again, so I ran past the meat section to see what was available (and preferably at a low, cardholders price) and came across a pack of these honkin' boneless ribs, 4 in the pack and they were less than $5, so into the cart they went. I got home not knowing really what to expect (I wasn't really sure if they were boneless or not, that was a very pleasant surprise!) I tossed them in a ziplock bag with some Stubbs beef marinade and tossed them in the fridge for a half an hour or so, fired up the good old George Foreman grill and took 2 of these ginormous ribs out and cooked them for 10 minutes.. the end result was so good that even though I don't have a "real" camera I had to take pics with my cell phone camera, lol..

Okay, the picture is a little fuzzy, but it was taken with my cell phone, I just had to show you how gorgeous this looked, and they melted in your mouth.. wow.. not something I really expected from a pack of boneless ribs at all.

Dinner was awesome, together with some rice and peas.. damn good.
