The green stuff

I did it first thing this morning!!

Made the smoothie you pervs.

I gathered all my ingredients and first made one for myself and after the kid had a sip of mine he asked for one too!! Score!!! He drank his up, I ran out of the house with a green smoothie in one hand and my latte in the other.

It's really really good!! All you taste is the peanut butter and banana you don't taste the spinach at all. Of course once I find this and make it, the bottom of the blade of my blender breaks, but I already ordered another one. So in a few days I'll be back making these awesome smoothies and trying out a few more :)

Green Monsters

No.. not those kind of green monsters...

...this kind

I've been seeing these popping up here and there on Pinterest and initially thought why the heck would someone drink something that color?  I don't like weird colored foods. Not that green is a weird color or anything, just you usually eat your greens, not drink them.

But...

The green monster smoothie was Really good.  Really.  It tasted kind of like baby food to me.  I liked it so much that I started researching recipes so I can make it myself, because I felt really good after I drank it.  No 3pm exhaustion and I slept pretty well that night too.  I have this middle of the night insomnia where I have no trouble at all falling asleep, but I'm up around 3am and can't fall back to sleep.  If one little change in my diet can help remedy this I'm all for it.  even if a Major change in my diet could help I'd do it.  One step at a time here though.

I've seen a few different recipes for these smoothies and the closest "copycat" recipe calls for a "superfoods" powder that I have to pick up over the weekend when I go grocery shopping.  I found this recipe for Green Monster Spinach Smoothie over on Iowa Girl Eat's blog and I have the ingredients to give it a try tomorrow.  Even Kiddo wants to try it.. so that's a plus.  He doesn't eat school lunch and usually just has a Chobani in the morning before school and then doesn't eat all day until he gets home.

I'm going to try this smoothie in the morning and take pics and let y'all know what I think of it.  I'll also give an update if I can pick up this superfoods powder over the weekend to make the other smoothie.

Cheese Stuffed Mushrooms


OK, so technically these are an appetizer, but last night after all the food we ate on Sunday the kid and I were in the mood for a lighter dinner so we had these and a bowl of lentils each for dinner and it was perfect.

Cheese Stuffed Mushrooms

These are, in my opinion The best Stuffed mushrooms in the world!

Ingredients:
1 lb medium mushrooms
1/4 cup Finely chopped green onions
1 clove garlic, finely chopped
1 tsp dried sage

2 Tbs. parsley
1/2 tsp. dried basil leaves
1/4 tsp. pepper

1/4 cup butter
1/2 cup dry bread crumbs
1/4 cup grated Parmesan cheese


Directions:
Preheat oven to 350°f

Remove stems from mushrooms and chop finely (I just toss it all in the mini-prep and call it a day). Cook and stir mushroom stems, green onions and garlic in butter over medium heat until tender, about 5 minutes. Remove from heat & stir in remaining ingredients.

Fill mushroom caps with stuffing mixture. Place mushrooms, stuffing side up, in greased baking dish.

Bake for 15 minutes, serve hot.

**Notes**
This makes a lot of filling and we had quite a bit leftover afterwards (which did not go to waste) But I think these would also be great with some crab mixed in or even as a meal if made with portobello mushrooms and a salad on the side.

Chickpea burgers

Ever have one of those days when you open your fridge and realize that you have absolutely nothing to feed your starving 15 year old? No?  OK.. well, that might just be me, but really.. This is one of those weeks when I think.. Did I really go grocery shopping on Friday? WTF did I buy?

Luckily I had a can of chickpeas in the pantry and instead of making a salad with them I decided I'd get a little crazy and make some burgers with them.. so I did a little research online... Ugh.. every recipe I found had stuff I didn't have.. rice.. nope, tofu.. nope.. Quinoa?  nope, none of that either... so I decided to just wing it and go with what I had.

1 14oz can chickpeas
1/4 sweet onion chopped
1/4 cup breadcrumbs
1 tsp Italian Seasoning
pinch of sea salt
1/4 tsp ground coriander
about 2 Tbs olive oil

In a food processor add the onion and process it until it's finely chopped.  Add the chickpeas and pulse 2/3 times until fully incorporated with the onion.  Pour this mixture into a bowl and mix in the breadcrumbs, Italian seasoning, salt and coriander.  Pour in the olive oil and stir well to combine.

Heat a frying pan over medium heat while you make the patties.

Cook the patties over medium heat for 3-4 minutes on each side.

I served mine with mayo and a dash of Tabasco on whole wheat bread, lettuce and  a cucumber tomato salad on the side.

This dinner was less than $2 to throw together.

Fresh Tomato & cucumber salad

The other night when I came home my landlord's wife came out of the garden and asked me if I wanted some Tomatoes so of course I said yes, I love fresh tomatoes.  They were a little under ripe so I left them on the windowsill by the kitchen sink until they were just right.  Last night I made the most amazing salad and really.. sometimes it's just the simplest things made with the freshest ingredients makes the best meal.

If you make this at least 30 minutes before serving, by the time you get around to eating it it's good and juicy :) Yum.. so you can dip your bread into it.

1 tomato cut it up into chunks
1 cucumber, cut into chunks
5-6 fresh basil leaves, torn up
1 clove garlic, minced
salt to taste
Drizzle of good olive oil

Toss the tomato and cucumber into a large bowl, add salt and basil and toss well.  Add basil, garlic and olive oil and toss it all together.

Let sit for at least 30 minutes before serving.

Fruit Guys.. You ROCK!!

Okok, so I'm a little late getting to this post.. if you've read my previous post you can see that I was a little busy over the weekend baking.

So, Back to the FruitGuys box.

I was expecting my delivery Thursday night.. so when I heard someone in the driveway at 7am on Thursday morning I didn't think anything of it, I thought it was my landlord or one of his jerky kids.. But it wasn't... it was the delivery guy who was cool enough to not just toss the box over the driveway gate and leave it (like most of them do) it was left at my side door just like I had asked. When I went to leave at 7:30 I was really shocked that the fruit was already there, especially since the delivery times stated that it would arrive by the end of the day, so first thing in the morning was a totally awesome surprise. I was running a little late getting the kid to school (as usual, he has Chronic Lateness Disorder) so I brought the box inside and thought about that box all dang day.

When we got home the kid, of course had to be the one who took the honors in opening that box and inside were 2 giant fennel bulbs, 3 different kinds of apples, 2 meyer lemons, 1 tangelo, 1 gold nugget orange, 1 blood orange, a handful of sunchokes, about 5 yellow squash, a handful of red potatoes and a package of fresh rosemary (which I was excited about since after 3 years my Rosemary plant didn't survive this crazy NY winter).

That night I made roasted rosemary chicken with sauteed fennel, I'd never made fennel before, but both the kid and myself loved it.

Monday night I made pasta with roasted fennel, garlic and yellow squash.. it was unbelievable!

The apples and oranges are all gone.. all the freshest I've ever had aside from getting it straight from the farm (which this all is)

I still don't know what to do with the sunchokes. Raw, to me, they taste like dirt and I have no idea what the heck to do with them and any suggestions are welcome.

I will definitely be ordering from the FruitGuys again. I was very pleased with not only the quality of everything I ordered, but with their excellent customer service and the courtesy of the grower for adding in a handwritten note that the cherry tomatoes weren't available and substituted red potatoes in their place.

Ore-Ida Steam & Mash potatoes

I was given the opportunity to try out this product for free, so when my coupon for a free bag came in the mail I jumped at the first opportunity to get myself a bag and try them out. They're essentially cubed, skinned potatoes that come in four varieties; plain russet potatoes, garlic seasoned potatoes, three cheese and cut sweet potatoes. You cut off the top of the bag and zap it in the microwave for 10 minutes, add milk, butter and whatever else you fancy and viola, you've got mashed potatoes.. Now.. they were alright, nothing to write home about in my book though. I have no problem making home made mashed potatoes, I prefer making mashed potatoes from scratch, it's no problem for me to cut up the taters and toss 'em into a pot of boiling water, I like mine with the skin on anyway, so I don't have to deal with all that peeling nonsense.. and even if I don't want them with the peel on I'll boil some small whole ones and then you just rub the skins off. I didn't like the 'freezer' taste these had, I got the garlic ones and they didn't really leave me with a lasting impression. Will I get them again? No, probably not. I wouldn't really recommend them either unless it's a last minute decision. They are real potatoes, after all and not that boxed nonsense.
I had to add a LOT of butter to get them to taste good.. they had a grainy texture and I wasn't really pleased with them... they looked nice, but I'm sorry to say they didn't taste too great though.

Crash Hot Potatoes...

Tonight I really didn't know what I was going to make for dinner.. It's been a hell of a week, I can tell y'all.. judging from Tuesday's post and the fact that there hasn't been one since.. it just goes to show.. between leaving work at 2, leaving at 3:30 in a panic because the kid had a ride home and then his 'friend' left without him.. and then a minor meltdown yesterday when he was sure he had a ride and then didn't.. then finally got one.. it was just really something that I didn't think I was going to have to deal with.. and my car search isn't going so well.. because all I seem to find in my price range are junkers and this damn rainstorm isn't helping me today either (yea, thanks Hanna)

Anyway.. This is supposed to be about dinner..
Well.. the Kid and I made it to the supermarket (By Bus mind you, since the BF is working today and peapod totally pissed me off now that they raised their 'minimum delivery' to $60 from $50.. along with the $9.95 delivery charge, tax and the almost $2 fuel surcharge and coupon codes for peapod are almost nonexistent..) I figured we'd just go to Pathmark (since a friend sent me 3 coupons for Free blue bunny ice cream and I had one myself and Pathmark, waldbaums and A&P are the only stores that honor that coupon and I don't have the other two near me.. and the coupons expire on the 15th.. I just went ahead and did it.. so I picked up 4 -1.75Qt (seriously, I don't understand why it just can't be a half gallon anymore, it's so annoying.. but I digress) Hey, any ice cream for free is good in my book, lol.. so we got those (and hey, at $5.99 each I got $24 worth of ice cream for free.. Nice!)

So I still wasn't really certain what I was going to make tonight.. at first I thought pizza.. but then I remembered something I saw the other day while I was looking around and I found this: Crash Hot Potatoes by the Pioneer woman posted on tastefix by Grumpy's Honeybunch and for days I've been wanting to try them.. so I made Roasted Lemon Rosemary chicken and what I call Smashed Potatoes.. they're insanely good, perfectly seasoned, crispy skin on the bottom, just all around yummy!

Ok, ok, the pictures aren't great.. I was going to go camera shopping today.. but apparently Hanna had other plans (Damn hurricane!) The camera on my cell phone is fine for now though


These Smashed potatoes.. yea, they're definitely a keeper.. wow.. next time they're going with Roast beef or something Beefy, lol... Mmmmm.. Meat & Potatoes.. you just can't go wrong.

Woo Hoo Corn Fritters!!

Since I saw the post from adaptations on Corn fritters I've had an insane craving for them.. I did banana fritters Sunday and they were amazing (unfortunately, the pics were not.. But the camera has been returned and next week I'll work on getting a new one, for now you will have either cell phone pics. or none at all.. sorry) My stomach doesn't fare well from deep fried things, so I wanted something with a little less oil so I set myself on a search and came up with this recipe from Taste & Tell, who proclaimed their greatness even though her mouth was partially numb (what a trooper!) I had to go with her recipe.. with just a few modifications..

Here's the recipe:
Cheddar Corn Fritters
adapted from
Vegetables by the Culinary Institute of America

Makes about 16 fritters

3/4 cup flour

2 teaspoons sugar

1 teaspoon chili powder
salt and pepper to taste
3 ears corn, plus corn milk (or 2 cups corn kernels)*
3 tablespoons diced red or green bell pepper
2 large eggs, lightly beaten
1/2 cup water
1/2 cup grated Cheddar cheese
2 tablespoons melted butter
Vegetable oil for pan frying

If using fresh corn, bring a large pot of water to a boil. Add the shucked and cleaned corn to the water and boil for 3 minutes. Remove from water.
*Cut kernels from ears of corn and then scrape the cobs with a table knife to release all the milk. Catch this milk in a bowl and add to the batter. Stir together flour, sugar, chili powder, if using, salt, and pepper in a mixing bowl. Set aside.

Combine corn and corn milk, if available, bell pepper, if using, eggs, water and cheese in a bowl. Add to flour mixture all at once. Stir just until batter is evenly moistened. Stir in melted butter.

Pour oil into large skillet to a depth of 1/4 inch. Heat over medium heat until it registers 350 degrees on a deep-frying thermometer. Using a serving spoon and working in batches to avoid crowding, drop spoonfuls of batter into the hot oil. You will make about 16 fritters in all. Pan fry on the first side until golden brown and crisp, about 2 minutes. Turn once and fry until golden brown on the second side, 2 minutes more. Drain fritters on absorbent towels and season with salt.

If needed, you can keep the first batches of fritters warm in an oven at 200 degrees while you finish frying the rest. Serve at once.

the only minor modifications I made was I used a bit less oil and I omitted the peppers. I used an ice cream scooper to measure them into the oil and then flattened them with the spatula and they were extremely delicious.

Taste & Tell for posting this super recipe that was a hit in my house tonight. I served these as a side to grilled chicken and used my Cumin Lime dressing as a dip and it was unbelievable!

Chicken with tomato sauce over Campanelle

I had a few pieces of chicken leftover in the fridge from the other night in a ziplock bag that I didn't marinate and they needed to be cooked.. like, now. So since it's been a while since I made a pot of tomato sauce I decided I'd make some sauce and toss the chicken in.. I haven't done it in a while and it came out so perfectly. Now, I guess I'm like most people and I stick to one specific brand of tomato sauce that I really like the best (and I really stock up when it's on sale) but Tuttorusso is my brand of choice, it just brings the taste of my grandma's cooking right back into my kitchen. I guess there's a name for this recipe, lol.. but for the life of me I can't remember what it's called.

So here's what I did...

I took 3 cloves of garlic and minced them and tossed them into a pot with about 2 Tbs. olive oil on low heat.
Into that I put 4 chicken thighs with the skin removed and let brown on each side for about 4 minutes.
When the Chicken was golden I poured in 2 cans of Tuttorusso crushed tomatoes with basil and let it cook for about 2 hours (until the chicken was falling off the bone).
Tonight's pasta of choice was Barilla Campanelle. So I tossed it all together in a big bowl and everyone got to serve themselves.

Mmmmmmmm...

My little porch tomatoes..

I'm insanely proud of my garden this year, I have to say that the last few years has been a huge disappointment, BUT this year I got started early and instead of trying to grow big tomatoes (which I don't really eat anyway raw, but cook with) I decided to go with Cherry tomatoes, I only bought myself One plant (because I wouldn't have felt too bad if I killed it) and it's really done great! so far I've been picking one or two at a time as they ripen, but I've got whole clusters now that are ripening as we speak (and that makes me ridiculously happy!)

I think the most wonderful part of this garden project this year is the fact that P. will actually eat cherry tomatoes! The kid will not eat tomatoes on anything, it's the first thing he will pull off a sandwich or pick out of a salad, but not my little cherry tomatoes.. I had this sitting in a bowl in the fridge, waiting to get tossed into some pasta for dinner when I caught him.. with his fingers in the bowl!

Mom, these are the tomatoes from outside? Um.. yea, and the basil from that big old plant on the porch too, to which he replied These are the best tomatoes I've ever had.. can I have more? I damn near fell right over! Now granted he has never been one to turn away food or Not try something, he learned at a very early age that you eat what I cook or have cereal, but through culinary school he was willing to try everything I brought home and never balked about it. He willingly eats salmon, vegetables of any kind Even roasted Brussels sprouts, he will pick fruit over candy and the thing he drinks most is milk (No wonder at 12 he's already an inch taller than me!) the only 2 things I know this kid will not eat are avocados, and pepperoni cheese (which is something I love, cheddar cheese with little bits of Pepperoni in it, so bad for you, but so good!)... other than that it's all up for grabs (which makes me one of the luckiest mom's out there!)

So this little bunch of Cherry tomatoes sat in the refrigerator today, happily blending with some bail and garlic and a pinch of sea salt to let the yummy juices flow and then was tossed with a pot of Cavatelli and a drizzle of olive oil.. what could be better on a steamy summer night?

Giambotta.. It's what for dinner

My grandma Mary made the best Giambotta, and to me, nothing says summer more than a big bowl of Giambotta and a chunk of crusty Italian bread. Giambotta is Italian vegetable stew, made with zucchini, potatoes, tomatoes, peppers, garlic and basil.

This isn't my Grandma's recipe, but it's pretty damn close :)

Giambotta

2 white potatoes
2 zucchini
4 large tomatoes (or 1 28oz can chopped tomatoes)
olive oil
2 cloves garlic, coarsely chopped
2 large onions
1 red pepper or 1/2 bag frozen pepper strips (that's what I use, less waste & cheaper)
1/2 cup fresh basil - or 1 teaspoon dried
salt and pepper to taste

Clean, skin and chop all the vegetables into uniform dice.

To skin the tomatoes, bring a large pot of water to a boil. Hold each tomato with a long meat fork and submerge into the boiling water. Hold in the water until the skin bursts, about 10 seconds. Remove from boiling water and place in ice water immediately. The skin should peel right off. Peel, chop and seed the tomatoes.

In a large saucepan, heat the olive oil over medium heat. Saute the onion and garlic together until soft. Add the tomatoes, raise heat and bring to a boil.

Stir in the diced potatoes and lower heat to a simmer. Cook covered, until vegetables are almost tender.

Add the zucchini at the end and simmer the vegetables a little longer until they are all soft.

Add the basil and season with salt and pepper.

Serve as a side dish with meat or as it's own meal with some good crusty bread.

As you can see, this was a really good vegetarian dinner tonight.. all on it's own with some good Italian bread. Even P. went back for seconds!
