mushroom Swiss stuffed burgers

Ya know when you just want a hamburger.. Nothing fancy, but you want to do something special to make it just.. WOW.. This recipe makes 2 burgers and a little extra stuffing.

Sunday it was So incredibly gorgeous here in NY.. After taking the kid to the movies to see Alice in Wonderland we took a trip to the supermarket (and OMG there were girlscouts selling cookies.. I got a box of Samoas! I haven’t had them in such a long time.) I had in my brain Lasagne.. So I purchased everything I needed and then on the drive home.. There it was.. The smell of a charcoal grill and my whole mindset changed.. I wanted a hamburger.

I ran through the things I had in my fridge.. And it was set.

Hamburgers stuffed with sauteed onions mushrooms and Swiss cheese on toasted Italian bread (I’m not a big fan of pre packaged Hamburger buns, I like to make them myself with this Recipe here)

1 package sliced mushrooms
1 small onion, chopped
1Tbs canola oil
½ tsp sea salt
Sauteè until the onions are golden brown and the mushrooms are soft, about 10 minutes on med-low heat and then add ½ cup shredded Swiss cheese to the mix until it is melted and combined.

Then take ½ lb ground beef (you can also use ground turkey) into patties and push your finger into the center through the sides to make a pocket and with a teaspoon I add 2 teaspoons of the mix into each burger and seal the pocket closed.

I cooked these on the George Foreman grill and they were fantastic. They looked a little boring, but they were so good.. And The kid was sure surprised when he took his first bite.
